      1 egg, slightly beaten2 cups Cheddar cheese, shredded1 cup ricotta cheese1/4 cup granulated sugar1 teaspoon almond extract2 (20 ounce) cans apple pie filling8 lasagna noodles, cooked and drained 6 tablespoons flour2/3 cup packed brown sugar, divided1/4 cup quick-cooking oats1/2 teaspoon cinnamonDash of nutmeg3 tablespoons margarine, cold1 cup sour cream Heat oven to 350 degrees F. Combine egg, 2 cheeses, sugar and extract in medium bowl. Blend well. Spoon one can pie filling into greased 9 x 13-inch pan. Cover with half the noodles. Top with cheese mixture.       Ingredients :2 pounds lean ground beef1 large sweet onion, chopped2 garlic cloves, minced1 tsp. cuminOne half tsp. red pepperOne half tsp. cayenne pepper1 14-oz. can diced tomatoes, drained12 corn tortillas1 16-oz. container cottage or ricotta cheese1 cup Monterey Jack cheese, shredded2 cup lettuce shredded2 fresh tomatoes, diced1 cup black olives, sliced1 cup Cheddar cheese, shreddedBrown ground beef in a large skillet with onion and garlic. Add cumin, red pepper, cayenne pepper and diced tomatoes and cook over low-medium heat for several minutes. Remove from heat. Place 6 of the corn tortillas and the bottom of a lightly greased 13 x 9-inch baking dish and spread meat mixture evenly over tortillas. Top with remaining tortillas. Combine ricotta and Monterey Jack cheeses and mix well. Spread cheeses over tortillas and bake at 350 degrees for 30 minutes. Remove from oven and top with lettuce, tomatoes, black olives and cheddar cheese. Slice and serve.Tips : Use fat free tortillas.

      When I saw this in the February 2007 issue of Ladies' Home Journal, I just had to share. Instead of using pasta noodles, it uses egg wrappers (the picture, not from LHJ, shows traditional noodles). I love anything that uses roasted veggies, so I'm dying to give this recipe a try even through it's a bit labor intensive. Best of all - it only has 9 Weight Watchers Points per serving! It's a bit high in calories and fat grams, but with all the fiber from the vegetables, it turns out to be worth the effort. BUT , you can make your own - the recipe is at the end. Spice Islands had a Spaghetti Sauce Seasoning (1) that makes good sauce better; a great sauce, incomparable! They stopped making it a few years back. They got so many requests for it, that the company started making it again for a while; then once again, stopped production. I bought a case of the jars when I was emailed that it once again would go out of production. The Spaghetti Sauce Seasoning, combined with Spice Islands Italian Herb (still in production) is a match beyond your wildest tastes. This a VERY large recipe for a 12” x 18” x 3” pan.
