This is not a traditional creamy risotto. But in my recipe, watercress, arugula and basmati rice go really well together with scallops browned in butter and a little garlic! The dish is perfect as a starter or a light dinner. And the best of all, it's really easy and fast to prepare. Enjoy! Read more »
I always hesitate when it comes to posting following a Daring Bakers challenge. I enjoy the process so much, the sneakiness, the anticipation... that I feel like a kid a few days after Christmas... you know what I mean? It all starts over each month, but it weirds me out the few days after. To get back in the saddle, I bring you a meal I made last Saturday. A meal I am really excited about. I don't often roast chickens... I don't often roast any whole birds, if we're going off specifics here. I don't know why this recipe spoke to me, but I am pleased that it did. Growing up, my grandmother would often roast chickens, and I really loved how the smell filled the house. My hope was to replicate that memory.I read the reviews of this recipe online and followed their tweak recommendations (and a

Ever since we bought our Kitchen Aid Mixer (kneel down, bow your head in a moment of silence, please), I have only used it for one thing - making pasta. I am not a baker. I can not even pretend to be one. In fact, the other day, I thought I’d be [...]
Now there's nothing quite like warm soup on a cold winter's day. And here in the Great Lakes area we appear to be having the coldest, snowiest winter ever. In fact, not only do we have 3 feet snow on the ground, the branches of trees have frozen over and are glittering like shiny ornaments in the bright winter sun! Yes I spent the better half of my day admiring this sight and taking loads of photographs. With the setting sun, I decided to get back in and get some hot soup going. We love soup so much around here that I have taught myself to prepare it 'from scratch'!! Yes, I make my own soup stock, freeze it, and keep it handy to boil up a steaming hot favourite in a snap. Here's my recipe for our favourite Watercress & Potato Soup.Ingredients:2 tbsp butter1 oinion, chopped fine1 potato
Watercress and Red Dates Soup is my wife’s favourite soup. It is a popular soup among the Chinese and is another one of those really simple soup to cook. You can either cook it over the stove, slow cooker or even double boiled. The ingredients used are also pretty simple and the cooking steps are suitable for beginners whilst the nutritional benefits are aplenty. Though some restaurants use the older shoots for cooking this soup, I prefer the younger shoots as they are more tender and chewable-friendly
To cook this soup, I actually boil the meat (pork) for about 1 to 2 minutes and removed the scum appearing on the surface of the boiling water to get rid of potential “unpleasant” taste. The water is thrown away and the meat is then cooked into the soup. I prefer using bony pork parts (eg. ribs, shoulder, back) for this soup but you can also use chicken parts.
As for the watercress, I will pluck the tender shoots / stem with its leaves intact and discard the main lon

They like the normal way of cooking even if it taste slightly bitter.I used to pluck the leaves to cook. I'll remove the stems after cooking leaving only the leaves in the soup. It was easier for the kids. Now, they refuse to eat the veg, only want the soup. The Watercress Line vintage railway starts in Alresford in Hampshire. All of the road signs in the area point to Alresford and it’s not difficult to find once you’re in the vicinity. However, if you’re ever heading in that direction you’ll struggle to find Alresford in your road atlas because, strangely, it’s listed as “New [...]
